  • 200 g Fresh spinach
  • 2 tbsp Soy sauce
  • 1 tbsp Mirin
  • 5 g Bonito flakes (optional, for garnish)
  • 1 L Water
  • 1 tsp Salt
  • 1 tbsp Toasted sesame seeds

Directions

Step 1

Prepare a large bowl of ice water and set it aside. This will be used to cool the spinach after blanching.

Bring 1 liter of water to a boil in a medium pot. Add 1 teaspoon of salt to the boiling water.

Add the fresh spinach to the boiling water and blanch it for 30 seconds to 1 minute, until the leaves are vibrant green and slightly wilted.

Using tongs or a slotted spoon, transfer the blanched spinach immediately into the bowl of ice water to stop the cooking process. Let the spinach cool for 1-2 minutes.
