Ingredients

  • 1 cup Orzo pasta
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 4 cups Fresh spinach, roughly chopped
  • 2 cups Vegetable broth
  • 1 cup Asiago cheese, grated
  • 0.25 cup Heavy cream
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper, freshly ground
  • 1 teaspoon Lemon zest

Directions

Step 1

Bring a medium pot of salted water to a boil. Cook the orzo until just al dente, according to the package instructions. Drain and set aside.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Step 3

Add the chopped spinach to the skillet. Cook for 2-3 minutes, stirring frequently, until the spinach has wilted.

Step 4

Pour the vegetable broth into the skillet and bring it to a gentle simmer. Stir in the cooked orzo and allow it to absorb some of the broth, about 2 minutes.

Step 5

Lower the heat and stir in the grated Asiago cheese and heavy cream. Mix until the cheese is melted and the mixture becomes creamy.

Step 6

Season with salt, black pepper, and lemon zest. Taste and adjust seasoning as needed.

Step 7

Serve immediately, garnished with additional grated Asiago cheese if desired.
