  • 1.5 cups Orzo pasta
  • 2 cups Green beans, trimmed and cut into 2-inch pieces

  • 2 tablespoons Lemon juice
  • 0.25 cup Fresh basil leaves, chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 8 cups Water for boiling
  • 4 cups Ice water (for blanching the green beans)

Directions

Step 1

Bring 8 cups of water to a boil in a large pot. Add 1 teaspoon of salt (optional) to season the water.

Step 2

Add the orzo pasta to the boiling water and cook according to the package instructions, typically 8-10 minutes, until al dente.

Step 3

Meanwhile, in a separate pot, bring another pot of water to a boil. Add the green beans and blanch for 2-3 minutes until tender-crisp and bright green.

Prepare a bowl of ice water. Immediately transfer the blanched green beans into the ice water to stop the cooking process. Drain and set aside.
