Ingredients

  • 2 cups Orzo pasta
  • 1.5 cups Cherry tomatoes
  • 1 large Cucumber
  • 0.5 medium Red onion
  • 0.75 cups Kalamata olives
  • 1 cup Feta cheese
  • 0.25 cups Fresh parsley
  • 0.25 cups Extra-virgin olive oil
  • 3 tablespoons Fresh lemon juice
  • 2 tablespoons Red wine vinegar
  • 2 cloves Garlic
  • 1 teaspoon Dried oregano
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper

Directions

Step 1

Cook the orzo pasta according to the package instructions. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

Step 2

While the orzo is cooling, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber, finely chop the red onion, and slice the Kalamata olives. Place all the prepared vegetables in a large mixing bowl.
