Ingredients

  • 1 cup orzo pasta
  • 1 cup frozen peas
  • 3 tablespoons unsalted butter
  • 1 teaspoon annatto seeds
  • 5 leaves fresh sage leaves
  • 2 cloves garlic
  • 0.5 cup heavy cream
  • 0.5 cup chicken broth
  • 0.25 cup grated Parmesan cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Bring a large pot of salted water to a boil and cook the orzo pasta according to the package instructions until al dente. Reserve 1/4 cup of pasta water, then drain and set aside.

Step 2

In a medium skillet, heat the olive oil over medium heat. Add the annatto seeds and let them steep for 2-3 minutes until the oil turns a deep orange-red color. Remove and discard the seeds.

Add the butter to the infused oil and melt over medium heat. Once melted, add the fresh sage leaves and cook for 1 minute until fragrant.
