Ingredients

  • 1.5 cups Orzo pasta
  • 2 cups Broccoli florets
  • 2 tablespoons Olive oil
  • 2 pieces Garlic cloves, minced
  • 3 cups Chicken or vegetable broth
  • 1 teaspoon Lemon zest
  • 1 tablespoon Lemon juice
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons Fresh parsley, chopped (optional)

Directions

Step 1

Heat a large skillet or saucepan over medium heat and add the olive oil.

Step 2

Add the orzo to the skillet and toast it for 2-3 minutes, stirring often, until the orzo turns golden brown.

Step 3

Add the minced garlic to the skillet and sauté for 30 seconds until fragrant.

Step 4

Pour in the chicken or vegetable broth and bring to a boil.

Reduce the heat to low, cover the skillet, and simmer for 8-10 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
