Ingredients

  • 1 cup long-grain white rice
  • 2 tablespoons vegetable oil
  • 0.5 cup (chopped) onion
  • 2 cloves (minced) garlic
  • 0.5 cup tomato sauce
  • 2 cups chicken broth
  • 0.5 teaspoon ground cumin
  • 1 teaspoon salt
  • 0.25 teaspoon pepper
  • 0.5 cup frozen peas and carrots (optional)

Directions

Step 1

Rinse the rice under cold water until the water runs clear. Drain well and set aside.

Step 2

Heat the vegetable oil in a medium-sized saucepan over medium heat.

Step 3

Add the chopped onion and sauté for 2-3 minutes until softened and translucent.

Step 4

Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

Step 5

Add the rinsed rice to the saucepan. Stir frequently and toast for 3-4 minutes until the rice becomes lightly golden.

Step 6

Pour in the tomato sauce and chicken broth. Stir to combine.

Step 7

Add the ground cumin, salt, and pepper. If you’re using frozen peas and carrots, stir them in at this point.

Step 8

Bring the mixture to a gentle boil, then reduce the heat to low. Cover the saucepan with a tight-fitting lid.

Step 9

Simmer the rice for 18-20 minutes, or until the liquid is absorbed and the rice is tender.

Step 10

Remove the saucepan from heat and let the rice sit for 5 minutes with the lid on.

Step 11

Fluff the rice gently with a fork and serve warm. Garnish with fresh cilantro if desired.
