Ingredients

  • 2 5-ounce cans canned tuna (drained)
  • 4 tablespoons mayonnaise
  • 2 tablespoons finely chopped celery
  • 1 tablespoon finely chopped red onion
  • 1 teaspoon dijon mustard
  • 1 teaspoon lemon juice
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 slices slices of bread
  • 4 slices cheddar cheese slices
  • 2 tablespoons unsalted butter

Directions

Step 1

In a medium mixing bowl, combine the drained tuna, mayonnaise, celery, red onion, dijon mustard, lemon juice, salt, and black pepper. Mix well to create the tuna salad.

Step 2

Spread butter evenly on one side of each slice of bread.

Step 3

Place two slices of bread, buttered side down, on a cutting board or plate. Add a slice of cheddar cheese on each slice of bread.

Step 4

Evenly divide the tuna salad between the two slices of bread with cheese, spreading it out to cover the surface.

Step 5

Place another slice of cheddar cheese over the tuna salad, then top each sandwich with the remaining slices of bread, buttered side up.

Step 6

Heat a large skillet or griddle over medium heat.

Step 7

Place the sandwiches in the skillet and cook for 3-5 minutes on the first side, or until golden brown and the cheese begins to melt. Flip carefully and cook for another 3-5 minutes on the second side.

Step 8

Remove the sandwiches from the skillet and let them rest for 1-2 minutes before slicing in half and serving.
