  • 2 cups frozen mixed vegetables (peas, carrots, and corn)
  • 1 cup dry bread crumbs
  • 2 tablespoons butter, melted

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish and set aside.

Step 2

Season chicken breasts with salt and black pepper. Heat olive oil in a skillet over medium-high heat, and sear the chicken on both sides until golden brown, about 3-4 minutes per side (the chicken does not need to be fully cooked). Remove chicken and set aside.
