Ingredients

  • 100 grams Butter (softened)
  • 50 grams Caster sugar
  • 1 teaspoon Vanilla extract
  • 150 grams Self-raising flour
  • 25 grams Rolled oats
  • 6 pieces Glacé cherry (optional, for decoration)

Directions

Step 1

Preheat your oven to 180°C (160°C fan) or 350°F. Line a baking tray with parchment paper.

Step 2

In a mixing bowl, cream together the softened butter and caster sugar until light and fluffy. This can be done using a hand-held mixer or a wooden spoon.

Step 3

Add the vanilla extract and gently mix to incorporate.

Step 4

Sift in the self-raising flour and fold gently to form a soft dough.

Step 5

Using your hands, divide the dough into 12 equal portions and roll each portion into a ball.

Step 6

Roll each ball lightly in the rolled oats to coat the surface. Place them onto the prepared baking tray, spacing them a few inches apart to allow for spreading.

Step 7

If using glacé cherries, cut each one in half and gently press a cherry half into the center of each biscuit.

Step 8

Bake in the preheated oven for 12-15 minutes or until the biscuits are lightly golden at the edges.

Step 9

Remove from the oven and allow to cool on the baking tray for 5 minutes before transferring to a wire rack to cool completely.

Step 10

Store in an airtight container for up to a week, or serve immediately with a cup of tea.
