Ingredients

  • 1 piece Whole chicken
  • 3 tablespoons Olive oil
  • 2 tablespoons Soy sauce
  • 1 tablespoon Honey
  • 3 pieces Garlic cloves, minced
  • 1 teaspoon Ground ginger
  • 1 teaspoon Ground cumin
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 cups Cooked jasmine rice
  • 1 medium Carrot, diced
  • 3 stalks Green onions, chopped
  • 0.5 cup Water chestnuts, chopped
  • 1 teaspoon Sesame oil
  • 2 tablespoons Fresh cilantro, chopped
  • 1 piece Lemon

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a small bowl, mix olive oil, soy sauce, honey, minced garlic, ginger, cumin, salt, and black pepper to create a marinade.

Pat the whole chicken dry with paper towels, then rub the marinade all over the chicken, including under the skin and inside the cavity. Set aside to marinate while preparing the stuffing.

In a mixing bowl, combine cooked jasmine rice, diced carrot, chopped green onions, water chestnuts, sesame oil, and chopped cilantro. Mix until evenly combined.

Stuff the cavity of the chicken with the rice mixture, pressing it in firmly but not overpacking it. Secure the cavity opening with kitchen twine or toothpicks.
