Ingredients

  • 1 cup Basmati rice
  • 2 cups Water
  • 0.5 teaspoon Salt
  • 2 tablespoons Olive oil
  • 1.5 teaspoons Curry powder
  • 1 Garlic clove, minced
  • 1 tablespoon Soy sauce
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Honey
  • 1 medium Carrot, shredded
  • 1 small Red bell pepper, diced
  • 2 Green onions, sliced thinly
  • 0.5 cup Raisins
  • 2 tablespoons Cilantro, chopped
  • 0.25 cup Cashews, roasted and roughly chopped

Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear to remove excess starch.

Step 2

Bring 2 cups of water to a boil in a medium saucepan. Add the rice and salt, reduce the heat to low, cover, and simmer for 12–15 minutes or until the rice is tender and the water has been absorbed.

Step 3

Remove the rice from heat and let it sit, covered, for 5 minutes. Fluff with a fork and set aside to cool completely.

Step 4

In a small skillet, heat 1 tablespoon of olive oil over medium heat. Add the curry powder and minced garlic, cooking until fragrant, about 30 seconds. Remove from heat and let cool.

In a small bowl, whisk together the curry-infused oil, remaining 1 tablespoon of olive oil, soy sauce, rice vinegar, and honey to make the dressing.
