Ingredients

  • 2 pounds Beef stew meat
  • 0.5 cup Soy sauce
  • 0.25 cup Brown sugar
  • 2 cups Beef broth
  • 3 cloves Garlic cloves, minced
  • 1 tablespoon Ginger, grated
  • 1 Red bell pepper, sliced
  • 2 Carrots, julienned
  • 3 Green onions, sliced
  • 12 ounces Udon noodles or egg noodles
  • 2 tablespoons Cornstarch
  • 2 tablespoons Water
  • 1 teaspoon Sesame oil
  • 1 tablespoon Sesame seeds (optional, for garnish)

Directions

Step 1

In a large skillet over medium-high heat, sear the beef stew meat for 3-4 minutes until browned on all sides. Transfer the beef to the crock pot.

Step 2

In a small bowl, mix soy sauce, brown sugar, beef broth, minced garlic, and grated ginger. Pour this mixture over the beef in the crock pot.

Step 3

Add the red bell pepper slices and julienned carrots to the crock pot. Stir gently to combine.

Step 4

Cover the crock pot with the lid and cook on low for 6 hours or on high for 3-4 hours, until the beef is tender.

Step 5

In the last 30 minutes of cooking, cook the noodles according to the package instructions, then drain and set aside.

Step 6

Mix the cornstarch and water in a small bowl to create a slurry. Stir the slurry into the crock pot to thicken the sauce. Add the sesame oil and mix well.

Step 7

Carefully add the cooked noodles to the crock pot and stir to coat them in the sauce.

Step 8

Serve hot, garnished with sliced green onions and sesame seeds, if desired.
