Ingredients

  • 12 oz orecchiette pasta
  • 1 bunch broccoli rabe
  • 3 tbsp extra virgin olive oil
  • 4 garlic cloves, thinly sliced
  • 0.5 tsp red pepper flakes
  • 1 tsp salt
  • 0.25 tsp black pepper
  • 0.5 cup grated Parmesan cheese (optional)
  • 0.5 cup pasta cooking water

Directions

Step 1

Bring a large pot of salted water to a boil.

Step 2

Trim the tough ends from the broccoli rabe and chop it into 2-inch pieces.

Step 3

Blanch the broccoli rabe in the boiling water for 2 minutes, then transfer it to an ice bath to stop the cooking process. Drain and set aside.

Step 4

In the same boiling water, cook the orecchiette pasta according to package instructions until al dente. Reserve 1/2 cup of the pasta water before draining.

In a large skillet, heat the olive oil over medium heat.
