Ingredients

  • 400 grams orecchiette pasta
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic cloves, minced
  • 800 grams canned whole tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon sugar
  • 50 grams parmesan cheese, grated
  • 2 tablespoons fresh basil, chopped

Directions

Step 1

In a large pot, bring water to a boil. Add a generous amount of salt and cook the orecchiette pasta according to the package instructions until al dente. Drain and set aside.

Step 2

In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, or until soft and translucent.

Step 3

Stir in the minced garlic and cook for another minute until fragrant.

Step 4

Add the canned tomatoes, breaking them up with a spoon, and stir in the tomato paste, oregano, dried basil, salt, black pepper, and sugar.

Step 5

Bring the sauce to a simmer and let it cook for about 15-20 minutes, stirring occasionally, until it thickens and the flavors meld together.

Step 6

Taste the sauce and adjust seasoning if needed.

Step 7

Once the sauce is ready, add the cooked orecchiette pasta to the saucepan. Toss well to combine, ensuring all the pasta is evenly coated with the sauce.

Step 8

Remove from heat and stir in the grated parmesan cheese until it melts and blends into the sauce.

Step 9

Serve the pasta hot, garnished with fresh chopped basil on top.
