Ingredients

  • 200 g Rice noodles (medium thickness)
  • 1 large Cucumber
  • 1 medium Carrot
  • 1 medium Red bell pepper
  • 20 g Fresh cilantro
  • 1 tbsp Sesame seeds
  • 3 tbsp Soy sauce
  • 2 tbsp Rice vinegar
  • 1 tbsp Sesame oil
  • 1 tbsp Lime juice
  • 1 tbsp Honey
  • 1 clove Garlic
  • 1 tsp Fresh ginger
  • 0.5 tsp Red chili flakes
  • 0.5 tsp Salt
  • 2 tbsp Crushed peanuts (optional)

Directions

Step 1

Bring a pot of water to a boil and cook the rice noodles according to the package instructions, typically 3-5 minutes. Drain, rinse thoroughly with cold water, and set aside.

Step 2

While the noodles are cooking, julienne the cucumber, carrot, and red bell pepper into thin strips.

Step 3

Finely chop the fresh cilantro and set aside.

Step 4

In a small mixing bowl, prepare the tangy dressing by whisking together soy sauce, rice vinegar, sesame oil, lime juice, honey, finely grated garlic, grated fresh ginger, red chili flakes, and salt.

Step 5

In a large mixing bowl, combine the cooled noodles with the prepared vegetables and cilantro.

Step 6

Pour the tangy dressing over the noodles and gently toss everything together to ensure the noodles and vegetables are evenly coated.

Step 7

Sprinkle sesame seeds over the dish and, if desired, garnish with crushed peanuts for added crunch.

Step 8

Serve immediately, or chill in the refrigerator for 20-30 minutes for an extra-refreshing experience. Enjoy!
