Season the Chilean sea bass fillets with salt and black pepper on both sides. Set aside.
In a large skillet, heat 1 tablespoon of olive oil and 2 tablespoons of butter over medium-high heat.
Once the butter has melted, add the sea bass fillets to the skillet. Sear for about 3-4 minutes per side, until golden brown and just cooked through. Remove the fillets from the skillet and set them aside on a plate.
In the same skillet, lower the heat to medium and add the remaining tablespoon of olive oil. Add the shallot and garlic, cooking until fragrant and softened, about 2 minutes.
