Ingredients

  • 2 medium winter squash (e.g., butternut squash or acorn squash)
  • 0.5 cup orange juice
  • 1 tablespoon orange zest
  • 3 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 large eggs
  • 0.5 cup breadcrumbs
  • 0.25 cup grated Parmesan cheese
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice the winter squash in half lengthwise and scoop out the seeds. Place the halves cut-side down on a baking sheet lined with parchment paper.

Step 3

Roast the squash in the preheated oven for 30-40 minutes, or until the flesh is tender and easily pierced with a fork. Remove from the oven and allow to cool slightly.

Step 4

Once the squash has cooled enough to handle, scoop the flesh into a large mixing bowl and mash it until smooth with a potato masher or fork.

Step 5

Reduce the oven temperature to 375°F (190°C).

Step 6

To the mashed squash, add the orange juice, orange zest, butter, brown sugar, ground cinnamon, ground nutmeg, salt, and black pepper. Mix thoroughly until well combined.

Step 7

Lightly beat the eggs in a small bowl and then stir them into the squash mixture until fully incorporated.

Step 8

Lightly grease a 2-quart casserole dish with butter or cooking spray. Spread the squash mixture evenly into the dish.

Step 9

In a small bowl, mix together the breadcrumbs, grated Parmesan cheese, and olive oil. Sprinkle this topping evenly over the squash mixture.

Step 10

Bake the casserole in the preheated oven for 20-25 minutes, or until the topping is golden brown and crisp.

Step 11

Remove from the oven and let cool for 5 minutes before serving. Enjoy your Orange Winter Squash Casserole!
