Ingredients

  • 2 sheets puff pastry sheets
  • 150 g white chocolate
  • 150 g dried apricots
  • 2 tsp orange zest
  • 2 tbsp orange juice
  • 115 g cream cheese
  • 2 tbsp granulated sugar
  • 1 large egg yolk
  • 1 tbsp water
  • 2 tbsp powdered sugar

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

Thaw the puff pastry sheets according to package instructions. Once thawed, gently roll them out on a floured surface to ensure even thickness.

Step 3

Dice the dried apricots into small pieces and place them in a bowl. Add orange juice to the bowl and let the apricots soak for 10 minutes to soften slightly.

Step 4

In a separate bowl, mix cream cheese, granulated sugar, and orange zest until smooth.

Step 5

Chop the white chocolate into small pieces and set aside.

Step 6

Cut each puff pastry sheet into 4 equal squares, making a total of 8 squares.

Step 7

Spoon about 1 tablespoon of the cream cheese mixture into the center of each square. Top with a few pieces of soaked apricot and some chopped white chocolate.

Step 8

Fold the pastry squares into triangles by bringing one corner over the filling to meet the opposite corner. Press the edges together and crimp with a fork to seal.

Step 9

In a small bowl, whisk together the egg yolk and water to create an egg wash. Brush the tops of the pastries with the egg wash.

Step 10

Place the pastries onto the prepared baking sheet and bake in the preheated oven for 20-25 minutes or until golden brown and puffed.

Step 11

Remove the pastries from the oven and let them cool on a wire rack for 10 minutes.

Step 12

Dust the tops of the pastries with powdered sugar before serving.
