Ingredients

  • 1 lb boneless, skinless chicken thighs

  • 2 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 0.5 cup orange juice
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 cloves minced garlic
  • 1 tsp minced fresh ginger
  • 2 cups broccoli florets
  • 1 cup sliced bell pepper (red or yellow)
  • 1 cup sliced carrots
  • 1 cup sliced green onions
  • 1 tbsp sesame seeds
  • 4 cups cooked white or brown rice

Directions

Step 1

Cut the chicken thighs into bite-sized pieces and season with salt and pepper. Toss with cornstarch until evenly coated.

Step 2

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces in a single layer and cook for 2-3 minutes per side, until golden brown and cooked through. Remove the cooked chicken and set aside.
