Ingredients

  • 4 whole Oranges
  • 1 small Red onion
  • 10 g Fresh mint leaves
  • 2 tablespoons Extra virgin olive oil
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup Optional: Pitted black olives

Directions

Step 1

Peel the 4 oranges, removing as much of the white pith as possible. Slice them into thin rounds or into bite-sized segments, depending on your preference. Arrange them on a serving platter or individual plates.

Step 2

Peel the small red onion and slice it into very thin rings or half-moons. If the onion has a strong flavor, soak the slices in cold water for 5 minutes to mellow the taste, then drain and pat dry.

Step 3

Rinse and gently pat 10 grams of fresh mint leaves dry. Tear the leaves into small pieces or leave them whole, depending on your presentation preference.

Step 4

In a small bowl, whisk together 2 tablespoons of extra virgin olive oil, 1 tablespoon of lemon juice, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper to create the dressing.

Step 5

Drizzle the dressing evenly over the arranged oranges and red onions.

Step 6

Sprinkle the fresh mint leaves over the salad for a burst of color and freshness.

Step 7

If desired, add 0.25 cup of pitted black olives to the salad for an extra savory element.

Step 8

Serve immediately as a light appetizer or side dish. Refrigerate leftovers and consume within 1 day for the best flavor.
