  • 4 pieces Orange roughy fillets
  • 2 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 2 cloves Garlic cloves (minced)
  • 2 medium Zucchini (sliced into thin rounds)
  • 1 cup Cherry tomatoes (halved)
  • 1 large Bell pepper (sliced into strips)
  • 1 large Carrot (peeled and thinly sliced)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (chopped)
  • 0.5 teaspoon Paprika

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Rinse the orange roughy fillets under cold water and pat them dry with a paper towel.

Step 3

In a small bowl, combine the olive oil, lemon juice, minced garlic, salt, black pepper, and paprika. Mix well to create the marinade.

Brush the marinade over both sides of the fish fillets and set aside while you prepare the vegetables.
