Ingredients

  • 4 pieces orange roughy fillets
  • 2 large russet potatoes
  • 1 head garlic
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 0.5 cup parmesan cheese, grated
  • 0.5 cup panko breadcrumbs
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon lemon zest

Directions

Step 1

Preheat your oven to 400°F (200°C).

Peel and dice the russet potatoes into small cubes, then boil them in salted water for 10-12 minutes, or until tender. Drain and set aside to cool slightly.

Meanwhile, cut the top off the head of garlic, drizzle with 1 tablespoon of olive oil, wrap in aluminum foil, and roast in the oven for 25 minutes until soft and fragrant.
