Ingredients

  • 4 pieces salmon fillets
  • 0.5 cup orange juice
  • 1 tablespoon orange zest
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley
  • 1 large orange orange slices

Directions

Step 1

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.

Step 2

In a small bowl, whisk together the orange juice, orange zest, honey, soy sauce, olive oil, minced garlic, salt, and black pepper to make the marinade.

Step 3

Place the salmon fillets on the prepared baking sheet, skin-side down, and evenly pour half of the marinade over the salmon, reserving the other half for later.

Step 4

Arrange orange slices around and on top of the salmon, and transfer the baking sheet to the preheated oven.

Step 5

Roast the salmon for 12-15 minutes, or until it is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).

Step 6

While the salmon is roasting, heat the reserved marinade in a small saucepan over medium heat. Bring it to a gentle simmer and cook for 2-3 minutes until slightly thickened.

Step 7

Once the salmon is done, remove it from the oven and drizzle the thickened marinade over the fillets.

Step 8

Garnish with freshly chopped parsley and serve immediately with your favorite sides, such as steamed vegetables or rice.
