Ingredients

  • 1 cup long-grain white rice
  • 1 cup fresh orange juice
  • 1 cup water
  • 2 tablespoons olive oil
  • 1 cup pearl onions, peeled
  • 1 cup frozen sweet peas
  • 1 teaspoon orange zest
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Rinse the rice under cold water until the water runs clear. Set aside.

Step 2

In a medium saucepan, combine the orange juice and water, and bring to a boil.

Step 3

Stir in the rice, cover the saucepan, reduce the heat to low, and simmer for 15–18 minutes, or until the liquid is absorbed and the rice is tender.

Step 4

While the rice cooks, heat the olive oil in a large skillet over medium heat.

Step 5

Add the pearl onions to the skillet and cook, stirring occasionally, for 5–7 minutes, until they are golden brown and tender.

Step 6

Stir in the frozen peas and cook for an additional 2–3 minutes, until the peas are heated through.

Step 7

Once the rice is cooked, fluff it with a fork and stir in the orange zest, salt, and black pepper.

Step 8

Add the cooked pearl onions and peas to the rice and gently mix to combine.

Step 9

Transfer the rice to a serving dish and garnish with chopped fresh parsley. Serve warm.
