Ingredients

  • 0.5 cup wild rice
  • 0.5 cup white rice
  • 2 cups water
  • 0.5 cup orange juice
  • 1 tablespoon orange zest
  • 0.5 cup raisins
  • 2 tablespoons butter
  • 0.5 teaspoon salt
  • 0.25 teaspoon cinnamon
  • 0.25 cup slivered almonds (optional)
  • 1 tablespoon fresh parsley (for garnish, optional)

Directions

Step 1

Rinse the wild rice and white rice under cold water until the water runs clear. Set aside.

Step 2

In a medium saucepan, combine the wild rice, water, and 1/4 teaspoon of salt. Bring to a boil over medium-high heat.

Step 3

Once boiling, reduce the heat to low, cover, and simmer for 20 minutes.

Step 4

After 20 minutes, add the white rice to the saucepan, along with orange juice, orange zest, raisins, and another 1/4 teaspoon of salt. Stir gently to combine.

Step 5

Replace the lid and continue to simmer on low heat for an additional 20 minutes, or until both types of rice are tender and the liquid is fully absorbed.

Turn off the heat and add the butter and cinnamon to the rice mixture. Fluff the rice with a fork to evenly distribute the butter and spices.

If using slivered almonds, toast them lightly in a dry skillet over medium heat for 2-3 minutes until fragrant and golden. Stir them into the rice blend.
