Ingredients

  • 250 grams pasta (fusilli or farfalle)
  • 1 whole orange (large)
  • 2 cups baby spinach
  • 1 medium red bell pepper
  • 1 cup cherry tomatoes
  • 0.5 medium red onion
  • 0.5 cup black olives (sliced)
  • 2 tablespoons fresh parsley (chopped)
  • 3 tablespoons olive oil
  • 4 tablespoons orange juice (freshly squeezed)
  • 1 tablespoon white wine vinegar
  • 1 teaspoon honey
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon salt
  • 1 teaspoon orange zest

Directions

Step 1

Bring a pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Drain, rinse with cold water, and set aside.

While the pasta cooks, zest the orange and then juice it to extract about 4 tablespoons of orange juice. Set both aside.
