Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup mandarin oranges (canned, drained)
  • 1 cup orange juice
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon ginger (freshly grated)
  • 2 cloves garlic (minced)
  • 2 tablespoons cornstarch
  • 3 tablespoons water
  • 0.5 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup vegetable oil
  • 2 stalks green onions (sliced, for garnish)
  • 1 tablespoon sesame seeds (for garnish)

Directions

Step 1

Prepare the chicken by slicing each breast into bite-sized cubes.

Step 2

In a bowl, season the chicken with salt and black pepper.

Step 3

Set up a breading station with three shallow bowls: place flour in the first bowl, beaten eggs in the second, and breadcrumbs in the third.

Step 4

Dip each piece of chicken in the flour, then in the eggs, and finally coat it in the breadcrumbs. Set aside on a plate.

Step 5

In a large skillet, heat the vegetable oil over medium heat.

Step 6

Fry the breaded chicken pieces in batches until golden and crispy, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.

Step 7

In a small bowl, whisk together the orange juice, soy sauce, honey, rice vinegar, grated ginger, and minced garlic.

Step 8

In another small bowl, mix the cornstarch with 3 tablespoons of water to create a slurry and set aside.

Step 9

In a saucepan over medium heat, combine the orange juice mixture and drained mandarin oranges. Bring to a simmer.

Step 10

Slowly add the cornstarch slurry to the saucepan while stirring, and cook for 2-3 minutes until the sauce thickens.

Step 11

Toss the fried chicken pieces in the saucepan with the orange-mandarin sauce until fully coated.

Step 12

Serve the Orange Mandarin Chicken over steamed rice or noodles, garnished with sliced green onions and sesame seeds.
