Ingredients

  • 1 lb Pork tenderloin
  • 4 Carrots
  • 0.5 cup Orange juice
  • 1 tsp Orange zest
  • 2 tbsp Honey
  • 1 tbsp Soy sauce
  • 2 Garlic cloves
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Peel the carrots and cut them into 1-inch chunks. Set aside.

Step 3

Finely mince the garlic cloves.

Step 4

Pat the pork tenderloin dry with paper towels and season it with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.

Step 5

In a small bowl, mix together the orange juice, orange zest, honey, soy sauce, and minced garlic to create the glaze. Set aside.

Step 6

Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Add the pork and sear for 2-3 minutes on each side until golden brown. Remove the pork from the skillet and set it aside.

Step 7

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the carrots and season them with the remaining salt and black pepper. Toss to coat and cook for 2-3 minutes.

Step 8

Return the pork tenderloin to the skillet, nestling it among the carrots.

Step 9

Pour the orange glaze over the pork and carrots, ensuring everything is evenly coated.

Step 10

Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the pork reaches an internal temperature of 145°F (63°C).

Step 11

Remove the skillet from the oven and let the pork rest for 5 minutes before slicing.

Step 12

Garnish with fresh parsley, if desired, and serve the pork slices alongside the glazed carrots. Spoon additional glaze from the skillet over the top for added flavor.
