Ingredients

  • 8 pounds fully cooked bone-in ham
  • 1 cup orange juice
  • 0.5 cup brown sugar
  • 0.25 cup honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon orange zest
  • 0.5 teaspoon ground cloves
  • 2 tablespoons unsalted butter
  • 20 pieces whole cloves
  • 1 cup water

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Place the ham in a large roasting pan, cut side down. Use a sharp knife to score the fat layer on the ham in a crisscross pattern and optionally stud the ham with whole cloves by inserting them into the scored lines.

Step 3

Add 1 cup of water to the bottom of the roasting pan to prevent the ham from drying out while baking. Cover the ham tightly with aluminum foil and bake for 1 hour and 30 minutes.

Step 4

While the ham bakes, prepare the orange glaze by combining orange juice, brown sugar, honey, Dijon mustard, orange zest, ground cloves, and unsalted butter in a small saucepan. Cook over medium heat, whisking regularly, until the mixture thickens slightly and becomes syrupy, about 5-7 minutes. Remove from heat and set aside.

Step 5

After the initial baking time, remove the ham from the oven and discard the foil. Generously brush the ham with the orange glaze, ensuring all sides are evenly coated.

Step 6

Return the glazed ham to the oven and continue baking, uncovered, for an additional 30-40 minutes. Brush the ham with more glaze every 10-15 minutes to build a flavorful, sticky crust.

Step 7

Once the ham reaches an internal temperature of 140°F (60°C), remove it from the oven and let it rest for 15 minutes before carving. This allows the juices to redistribute, ensuring a moist and tender ham.

Step 8

Slice the ham and serve it warm, garnished with extra orange zest or slices of fresh orange for presentation, if desired. Enjoy!
