Ingredients

  • 2 pieces English muffins
  • 4 pieces Eggs
  • 2 tablespoons Fresh orange juice
  • 1 teaspoon Orange zest
  • 1 cup Unsalted butter
  • 3 pieces Egg yolks
  • 1 tablespoon White vinegar
  • 4 slices Canadian bacon or ham
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Fresh parsley or chives (optional, for garnish)

Directions

Step 1

Split the English muffins in half and lightly toast them. Set aside.

Step 2

In a medium saucepan, melt the butter over low heat. Allow it to cool slightly while you prepare the hollandaise sauce.

Step 3

In a heatproof bowl, whisk together the egg yolks, orange juice, and orange zest until smooth.

Place the bowl over a pot of simmering water (making sure the bowl doesn’t touch the water) and whisk constantly until the egg mixture thickens slightly, about 2-3 minutes.
