  • 1.25 cups Buttermilk

  • 1 teaspoon Ground cinnamon
  • 0.25 cup Unsalted butter, melted
  • 0.5 cup Brown sugar, packed
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Orange zest
  • 0.75 cup Chopped dates
  • 0.5 cup Chopped walnuts or pecans

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners or lightly grease with cooking spray.

Step 2

In a large mixing bowl, combine the wheat bran and buttermilk. Stir well and let the mixture sit for 10 minutes to soften.

In another bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon.
