  • 3 large Eggs
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Orange zest
  • 2 cups Carrots, grated
  • 0.5 cup Chopped walnuts or pecans (optional)
  • 8 ounces Cream cheese
  • 0.5 cup Unsalted butter, softened
  • 3 cups Powdered sugar
  • 2 tablespoons Orange juice
  • 1 teaspoon Additional orange zest (for frosting)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

In a medium-sized bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, and salt. Set aside.
