  • 0.5 cup Buttermilk
  • 1 large Egg
  • 0.25 cup Honey
  • 0.25 cup Coconut oil (melted)
  • 1 teaspoon Vanilla extract
  • 0.5 cup Chopped nuts or raisins (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease with cooking spray.

Step 2

In a large mixing bowl, whisk together the oat bran, all-purpose flour, baking powder, baking soda, ground cinnamon, and salt until well combined.

In a separate bowl, mash the ripe bananas thoroughly with a fork. Stir in the orange zest, freshly squeezed orange juice, buttermilk, egg, honey, melted coconut oil, and vanilla extract until the mixture is smooth and well blended.
