Ingredients

  • 1.75 cups All-purpose flour
  • 2 cups Granulated sugar
  • 0.75 cups Unsweetened cocoa powder
  • 1.5 teaspoons Baking powder
  • 1.5 teaspoons Baking soda
  • 1 teaspoon Salt
  • 1 cup Buttermilk
  • 0.5 cups Vegetable oil
  • 2 Large eggs
  • 2 teaspoons Vanilla extract
  • 1 cup Boiling water
  • 8 ounces Dark chocolate (chopped)
  • 1 cup Heavy cream
  • 2 tablespoons Unsalted butter

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans. Line the bottoms with parchment paper for easier removal.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt until well combined.

Step 3

Add the buttermilk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix until smooth using an electric mixer on medium speed for about 2 minutes.

Step 4

Reduce the mixer to low speed and carefully add the boiling water to the batter. The batter will be thin, but this is normal.

Step 5

Divide the batter evenly between the prepared cake pans. Tap the pans gently on the countertop to release any air bubbles.

Step 6

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Step 7

Allow the cakes to cool in the pans for 15 minutes, then turn them out onto a wire rack to cool completely.

Step 8

To make the ganache, heat the heavy cream in a saucepan over medium heat until it begins to simmer. Do not let it boil.

Step 9

Remove the cream from the heat and pour it over the chopped dark chocolate in a heatproof bowl. Let sit for 2-3 minutes, then whisk until smooth and glossy.

Step 10

Stir in the unsalted butter until fully incorporated, then let the ganache cool at room temperature until it thickens to a spreadable consistency.

Step 11

To assemble the cake, place one cake layer on a serving plate or cake stand. Spread a thick layer of ganache on top.

Step 12

Place the second cake layer on top and frost the top and sides of the cake with the remaining ganache. Smooth out with an offset spatula for a polished look.

Step 13

Let the cake sit at room temperature for about 30 minutes to set. Slice and serve. Store leftovers in an airtight container for up to 3 days.
