  • 1 medium Bell pepper (finely chopped, any color)
  • 2 Eggs (beaten)
  • 1 cup Breadcrumbs (preferably whole wheat)
  • 1.5 cups Ketchup
  • 1 tablespoon Worcestershire sauce
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Parsley (chopped, optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper for easy removal.

In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and cook for 3-4 minutes, until softened. Stir in the minced garlic, grated carrot, diced celery, and chopped bell pepper. Cook for another 5-6 minutes, stirring occasionally, until the vegetables are tender.
