Ingredients

  • 2 tablespoons Butter
  • 1 tablespoon Olive oil
  • 1 medium (diced) Yellow onion
  • 3 minced Garlic cloves
  • 2 tablespoons Flour
  • 4 cups Chicken or vegetable stock
  • 3 medium (peeled and diced) Russet potatoes
  • 4 cups Fresh or frozen corn kernels
  • 1 cup Heavy cream
  • 1 teaspoon Paprika
  • 0.25 teaspoon Cayenne pepper
  • 1 teaspoon (or to taste) Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons (chopped, for garnish) Fresh parsley
  • 4 slices (optional, cooked and crumbled for garnish) Bacon

Directions

Step 1

In a large pot or Dutch oven, heat the butter and olive oil over medium heat until the butter has melted.

Step 2

Add the diced onion and sauté for 5-7 minutes until soft and translucent. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

Step 3

Sprinkle the flour over the onion and garlic mixture. Stir well to coat the vegetables and cook for 1-2 minutes, allowing the flour to absorb the oil.

Step 4

Gradually pour in the chicken or vegetable stock, stirring constantly to avoid lumps. Bring the mixture to a simmer.

Step 5

Add the diced potatoes and let them cook for 10-15 minutes, or until they are tender when pierced with a fork.

Step 6

Stir in the corn kernels, heavy cream, paprika, cayenne, salt, and black pepper. Simmer gently for another 10 minutes, stirring occasionally.

Step 7

Using an immersion blender, blend the soup slightly to thicken it while still leaving some texture. Alternatively, transfer about 2 cups of the soup to a blender, blend until smooth, and return it to the pot.

Step 8

Taste and adjust the seasoning as needed.

Step 9

Serve the corn chowder hot, garnished with chopped parsley and crumbled bacon (if using).
