  • 2 pounds russet potatoes
  • 4 tablespoons unsalted butter

  • 0.25 cups sour cream

Directions

Step 1

Peel the russet potatoes and cut them into evenly-sized chunks (about 2-inch pieces). Rinse the potato chunks under cold water to remove excess starch.

Step 2

Place the potato chunks in a large pot and add enough cold water to cover them by about 2 inches. Add a pinch of salt to the water.

Bring the pot to a boil over medium-high heat, then reduce the heat to a simmer. Cook the potatoes for 15-20 minutes, or until they are fork-tender and easily pierced by a knife.
