Ingredients

  • 2 cans (5 oz each), drained canned tuna
  • 1 cup, roughly chopped marinated artichoke hearts
  • 0.25 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • 0.5 teaspoon garlic powder
  • 1 tablespoon, finely chopped fresh parsley
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 slices sourdough bread slices
  • 4 slices cheddar or Gruyere cheese
  • 1 tablespoon (optional, for brushing the bread) olive oil

Directions

Step 1

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

Step 2

In a medium bowl, combine the drained tuna, chopped artichoke hearts, mayonnaise, Dijon mustard, lemon juice, garlic powder, parsley, salt, and black pepper. Mix well until all ingredients are evenly distributed.

Step 3

Lightly brush one side of each bread slice with olive oil, if using, and place them on the prepared baking sheet, oiled side down.

Step 4

Divide the tuna and artichoke mixture evenly among the four bread slices, spreading it to cover the top of each slice.

Step 5

Place a slice of cheese on top of the tuna mixture on each sandwich.

Step 6

Bake in the preheated oven for 6-8 minutes, or until the cheese is melted and bubbly. If desired, turn on the broiler for 1-2 minutes at the end for a golden, crispy cheese topping.

Step 7

Carefully remove the baking sheet from the oven and let the melts cool for 2 minutes before serving. Serve warm and enjoy!
