Ingredients

  • 4 pieces vegetarian burger patties
  • 4 pieces whole-grain bread slices
  • 1 large yellow onion
  • 2 tablespoons olive oil
  • 2 cloves garlic cloves
  • 2 cups baby spinach
  • 4 pieces cheese slices (optional)
  • 4 tablespoons ketchup or burger sauce
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Peel and thinly slice the yellow onion into rings.

Step 2

Mince the garlic cloves and set them aside.

Step 3

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced onions and a pinch of salt. Sauté for 8-10 minutes, stirring occasionally, until the onions are golden and caramelized. Remove from the skillet and set aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the minced garlic and cook for 30 seconds until fragrant.

Step 5

Toss the baby spinach into the skillet with the garlic, cooking for 1-2 minutes until just wilted. Season with a pinch of salt and black pepper. Remove from heat and set aside.

Step 6

Cook the vegetarian burger patties according to the package instructions (pan-fry, grill, or bake) until heated through and slightly browned.

Step 7

Lightly toast the whole-grain bread slices in a toaster or on a dry skillet.

Step 8

Assemble the open-face burgers: Place a toasted bread slice on a plate, then layer with a handful of wilted spinach, a cooked burger patty, and a slice of cheese (if using). Top with sautéed onions and a dollop of ketchup or burger sauce.

Step 9

Repeat for all slices and serve immediately.
