Ingredients

  • 1 pound Ground beef
  • 0.5 pound Chorizo sausage
  • 1 large Yellow onion, diced
  • 1 medium Green bell pepper, diced
  • 4 cloves Garlic cloves, minced
  • 28 ounces Diced tomatoes (canned)
  • 2 tablespoons Tomato paste
  • 2 cups Beef broth
  • 15 ounces Kidney beans (canned, rinsed and drained)
  • 15 ounces Black beans (canned, rinsed and drained)
  • 2 tablespoons Chili powder
  • 1 tablespoon Ground cumin
  • 1 teaspoon Paprika
  • 0.5 teaspoon Cayenne pepper
  • 1 teaspoon Dried oregano
  • 1 teaspoon Sugar
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro, chopped (optional for garnish)
  • 0.5 cup Shredded cheddar cheese (optional for topping)
  • 0.25 cup Sour cream (optional for topping)
  • 0 Tortilla chips (optional for serving)

Directions

Step 1

Heat a large pot or Dutch oven over medium-high heat. Add the ground beef and chorizo, breaking them up with a wooden spoon. Cook until browned and fully cooked through, about 8–10 minutes. Drain any excess fat.

Step 2

Add the diced onion, green bell pepper, and minced garlic to the pot. Cook for another 5–6 minutes, stirring occasionally, until the vegetables have softened.

Step 3

Stir in the chili powder, cumin, paprika, cayenne pepper, oregano, salt, and black pepper. Toast the spices for 1–2 minutes to release their aromas.

Step 4

Add the diced tomatoes, tomato paste, beef broth, kidney beans, and black beans to the pot. Stir well to combine.

Step 5

Bring the chili to a simmer. Reduce the heat to low, cover, and let it cook for 45 minutes, stirring occasionally to prevent sticking.

Step 6

Taste the chili and adjust the seasonings if needed. If a thicker consistency is desired, uncover the pot and simmer for an additional 10 minutes.

Step 7

Serve hot with optional toppings such as chopped cilantro, shredded cheddar cheese, sour cream, and tortilla chips. Enjoy!
