Ingredients

  • 2 cups (shredded) Zucchini
  • 0.5 cups (finely chopped) Yellow Onion
  • 2 cups All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 0.5 teaspoons Baking Soda
  • 1 teaspoons Salt
  • 0.5 teaspoons Ground Black Pepper
  • 2 large Eggs
  • 0.5 cups Olive Oil
  • 0.25 cups Milk
  • 1 cups Shredded Cheddar Cheese
  • 2 tablespoons Chopped Fresh Parsley
  • 1 tablespoons Chopped Fresh Dill (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and set it aside.

Step 2

Shred the zucchini using a grater and place it in a clean dish towel. Squeeze out excess moisture to prevent the bread from becoming too wet.

Step 3

In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, salt, and ground black pepper. Mix well to evenly distribute the dry ingredients.

Step 4

In a separate bowl, whisk together the eggs, olive oil, and milk until fully combined.

Step 5

Add the shredded zucchini, chopped onion, shredded cheddar cheese, parsley, and dill (if using) to the wet ingredients. Stir until evenly mixed.

Step 6

Gradually add the dry ingredients to the wet mixture, stirring gently until no streaks of flour remain. Be careful not to overmix, as this may affect the texture of the bread.

Step 7

Pour the batter into the prepared loaf pan and spread it out evenly.

Step 8

Place the loaf pan in the preheated oven and bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.

Step 9

Remove the bread from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.

Step 10

Slice and serve warm or at room temperature. This bread pairs wonderfully with butter or cream cheese!
