Ingredients

  • 4 large Russet potatoes
  • 4 tablespoons Unsalted butter
  • 1 packet Dry onion soup mix
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash and peel the potatoes, then slice them into thin, even rounds about 1/4-inch thick.

Step 3

Lightly grease a 9x13-inch baking dish with 1 tablespoon of olive oil.

Step 4

In a large mixing bowl, combine the potato slices, remaining olive oil, onion soup mix, salt, and black pepper. Toss until the potatoes are evenly coated.

Step 5

Layer the seasoned potato slices evenly in the prepared baking dish.

Step 6

Cut the butter into small pieces and scatter them over the top of the potatoes.

Step 7

Cover the baking dish tightly with aluminum foil to seal in the moisture.

Step 8

Bake in the preheated oven for 30 minutes.

Step 9

After 30 minutes, remove the foil and continue baking for an additional 15 minutes, or until the potatoes are tender and lightly golden on top.

Step 10

Remove from the oven and let the dish cool slightly for 5 minutes before serving. Optionally, garnish with fresh parsley for a pop of color.
