  • 6 cups Low-sodium vegetable broth
  • 2 sprigs Fresh thyme
  • 1 Bay leaf
  • 0.5 teaspoon (or to taste) Salt
  • 0.25 teaspoon (or to taste) Black pepper
  • 2 tablespoons, chopped (optional garnish) Fresh parsley

Directions

Step 1

Heat the olive oil in a large pot over medium heat.
