Ingredients

  • 2 large yellow onions
  • 2 cups buttermilk
  • 2 cups all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 0.25 teaspoons cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 4 cups vegetable oil

Directions

Step 1

Peel the onions and slice them into very thin rings, about 1/8 inch thick. Use a mandoline slicer for uniform slices if available.

Step 2

Separate the onion slices into rings and place them in a large bowl. Pour the buttermilk over the onions, ensuring they are fully submerged. Let them soak for at least 15 minutes.

Step 3

In another large bowl, whisk together the flour, paprika, garlic powder, cayenne pepper, salt, and black pepper.

Step 4

Heat the vegetable oil in a deep, heavy-bottomed pot or deep fryer over medium-high heat to 375°F (190°C). The oil should be about 2 inches deep to ensure proper frying.

Step 5

Remove the onion rings from the buttermilk, a small handful at a time, allowing the excess liquid to drip off.

Step 6

Dredge the onion rings in the seasoned flour mixture, tossing to coat them evenly. Shake off any excess flour before frying.

Step 7

Carefully drop the coated onion rings into the hot oil in small batches to avoid overcrowding. Fry until golden brown and crispy, about 2-3 minutes per batch.

Step 8

Use a slotted spoon or spider strainer to remove the fried onion rings and transfer them to a paper towel-lined plate to drain excess oil.

Step 9

Repeat with the remaining onion rings, making sure the oil returns to the correct temperature between batches.

Step 10

Serve the onion haystacks immediately as a snack, side dish, or topping. Enjoy them while they’re hot and crispy!
