Ingredients

  • 3 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 3 large Yellow onions (thinly sliced)
  • 1 teaspoon Granulated sugar
  • 2 tablespoons All-purpose flour
  • 2 cups Beef stock or vegetable stock
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper (freshly ground)

Directions

Step 1

In a large skillet or saucepan, heat the butter and olive oil over medium heat until the butter is melted and begins to sizzle.

Step 2

Add the thinly sliced onions to the pan, stirring to coat them evenly in the butter and oil mixture.

Step 3

Sprinkle the sugar over the onions and cook, stirring often, for 15-20 minutes or until the onions are caramelized and golden brown. Adjust the heat if necessary to avoid burning.

Step 4

Once the onions are caramelized, sprinkle the flour over them and stir well to combine. Cook for 1-2 minutes to remove the raw flour taste.

Step 5

Gradually add the beef or vegetable stock to the pan, a little at a time, while stirring constantly to avoid lumps.

Step 6

Stir in the Dijon mustard and Worcestershire sauce and bring the mixture to a gentle simmer.

Step 7

Season the gravy with salt and freshly ground black pepper to taste, adjusting as needed.

Step 8

Simmer the gravy for 5-8 minutes, stirring occasionally, until it thickens to your desired consistency.

Step 9

Remove the gravy from heat and serve warm. Pour it over your favorite dishes such as mashed potatoes, roasted meats, or vegetables.
