Ingredients

  • 4 large Yellow onions
  • 8 Garlic cloves
  • 3 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 6 cups Vegetable or chicken broth
  • 1 teaspoon Thyme (fresh or dried)
  • 1 Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Heavy cream (optional)
  • 4 slices Crusty bread (optional, for serving)
  • 0.25 cup Grated Parmesan (optional, for garnish)

Directions

Step 1

Peel and thinly slice the yellow onions. Set aside.

Step 2

Peel 8 garlic cloves and slice them in half lengthwise.

Step 3

In a large pot or Dutch oven, heat olive oil and butter over medium heat until the butter melts.

Step 4

Add the sliced onions to the pot and stir to coat them in the oil and butter. Cook for 20-25 minutes, stirring occasionally, until the onions are golden brown and caramelized.

Step 5

While the onions are cooking, preheat a small skillet over medium-low heat and dry-roast the garlic cloves for 3-4 minutes, turning them occasionally, until fragrant and lightly browned.

Step 6

Once the onions are caramelized, add the roasted garlic to the pot and stir to combine.

Step 7

Pour in the vegetable or chicken broth and add the thyme, bay leaf, salt, and black pepper. Stir well to incorporate the flavors.

Step 8

Bring the mixture to a boil, then reduce the heat to low and let it simmer gently for 20 minutes. Stir occasionally.

Step 9

If using, stir in the heavy cream and simmer for 5 more minutes. Taste and adjust seasoning if needed.

Step 10

Remove the bay leaf before serving.

Step 11

Ladle the onion garlic soup into bowls and serve hot with crusty bread and grated Parmesan, if desired.
