Ingredients

  • 3 cups All-purpose flour
  • 1 tablespoon Granulated sugar
  • 1.5 teaspoons Salt
  • 2.25 teaspoons Active dry yeast
  • 1 cup Warm water
  • 4 tablespoons Unsalted butter
  • 1 medium Yellow onion, finely diced
  • 0.25 cup Fresh dill, chopped
  • 1 large Egg
  • 1 large Egg yolk
  • 1 as needed Olive oil or cooking spray

Directions

Step 1

In a large mixing bowl, combine the warm water, granulated sugar, and yeast. Let this sit for 5-10 minutes until it becomes frothy.

Step 2

While the yeast is activating, melt 2 tablespoons of butter in a skillet over medium heat. Add the finely diced onion and sauté until golden and caramelized, about 8-10 minutes. Set aside to cool slightly.

Step 3

Add the salt, egg, and 2 tablespoons of melted butter to the yeast mixture, stirring well to combine.

Step 4

Gradually add the flour, about 1/2 cup at a time, mixing until a dough forms. Once the dough becomes too stiff to stir, transfer it to a floured surface.

Step 5

Knead the dough for 8-10 minutes, until smooth and elastic. During the last minute of kneading, add the caramelized onion and chopped fresh dill, ensuring they are evenly distributed throughout the dough.

Step 6

Grease a large bowl with olive oil or cooking spray. Place the dough in the bowl, turning it once to coat the surface. Cover with a damp cloth and let rise in a warm place for 1 hour, or until it has doubled in size.

Step 7

Punch down the risen dough and shape it into a round loaf. Place it on a greased or parchment-lined baking sheet.

Step 8

In a small bowl, whisk together the egg yolk and 1 tablespoon of water to create an egg wash. Brush the top of the loaf with the egg wash for a golden crust.

Step 9

Preheat your oven to 375°F (190°C). Let the shaped loaf rise for an additional 20 minutes while the oven heats up.

Step 10

Bake the bread for 25-30 minutes, or until the top is golden brown and the bread sounds hollow when tapped on the bottom.

Step 11

Remove the bread from the oven and brush the top with the remaining 2 tablespoons of melted butter while it is still warm.

Step 12

Allow the bread to cool on a wire rack for at least 20 minutes before slicing and serving.
