  • 4 pieces Boneless, skinless chicken breasts
  • 2 large Yellow onions
  • 4 cloves Garlic
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 1 cup Chicken broth
  • 1 teaspoon Dry thyme
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 head Cauliflower
  • 0.5 cup Heavy cream
  • 1 cup Sharp cheddar cheese, shredded
  • 0.5 cup Parmesan cheese, grated
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the onions into thin strips. Mince the garlic.

Step 3

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium heat. Add the sliced onions and a pinch of salt. Cook the onions, stirring occasionally, for 10-15 minutes, until they are golden brown and caramelized. Remove them from the skillet and set aside.

In the same skillet, add the remaining olive oil and butter. Season the chicken breasts with thyme, paprika, salt, and pepper. Sear the chicken breasts on both sides until golden brown, about 3-4 minutes per side. Remove the chicken from the skillet and set aside.
