  • 500 grams All-purpose flour

  • 10 grams Salt
  • 7 grams Active dry yeast
  • 300 milliliters Warm water
  • 50 grams Unsalted butter
  • 15 milliliters Olive oil
  • 2 large Yellow onions
  • 1 teaspoon Thyme leaves (optional)
  • 1 large Egg (for egg wash)
  • 15 milliliters Water (for egg wash)

Directions

Step 1

In a small bowl, mix the yeast and sugar with 100 milliliters of warm water. Let it sit for 5-10 minutes until frothy.

Step 2

In a large mixing bowl, combine the flour and salt. Pour in the yeast mixture and the remaining warm water. Mix until a dough forms.

Step 3

Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic. Cover the dough with a damp cloth and let it rise for 1 hour or until doubled in size.

Step 4

While the dough rises, prepare the onions. Thinly slice the onions and cook them in a pan over medium heat with the olive oil and a pinch of salt. Stir frequently until the onions are caramelized and golden brown, about 15-20 minutes. If using thyme, stir it into the onions in the last few minutes of cooking. Let the onions cool completely.
